Rolled Sugar Cookies
1 cup Butter
1 cup Sugar
1 Egg
2 tbsp Milk
1 tsp Vanilla
2 1/2 cup Flour
1 tsp Baking Powder
In a large bowl mix butter, sugar, egg, milk and vanilla together. Mix until well incorporated.
Stir in the flour and baking powder.
cover and refrigerate at least 1 hour (or overnight).
Preheat oven to 400 degrees F.
Line baking sheets with parchment paper or use ungreased cookie sheet. Roll out dough on floured surface 1/4 to 1/2 inch thick – dusting dough with flour as needed. Cut into shapes with your cookie cutters. Using a spatula, transfer to prepared baking sheets (If dough gets soft, chill for about 10 minutes.). Place cookies 1 inch apart on ungreased or lined cookie sheet.
Bake for 6-9 minutes. The cookies should be light in color with light browning on the edges.
Cool completely on wire rack.
Optional – Ice cookies.
Store in airtight container in refrigerator or freezer.
Simple Icing
1 cup Powdered Sugar
2-3 Tablespoons milk
1 Teaspoon Vanilla
2-3 drops of food colouring (optional)
In a small bowl, sift confectioners’ sugar and mix in milk and vanilla until smooth and glossy.
If too thick, add half a teaspoon of milk at a time.
(Optional) Divide into separate bowls and add food colouring to each bowl. Dip cookies, spread with a spoon, knife or paint them with a brush.
Decorate as desired with sprinkles. Let harden about 20 minutes.
