Butterscotch Banana Bread

Hi Everyone! Welcome to my first ever recipe post here on the blog. I thought I’d start off with a new recipe I found, and then switched some ingredients to make it my own!

Butterscotch Banana Bread!

Now, I have to say.. My intent was to make this like a loaf, but I had extra batter and decided to make some muffins. After trying both the bread and the muffins – I think this recipe is better suited as muffins! So. I’ll write this recipe down as if it were for muffins. If you’d like to make it as a loaf, keep everything the same but start checking it at the 45 minute mark with a toothpick

Ingredients :

2 cups All Purpose Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
3/4 tsp Ground Cinnamon
1/2 cup Margarine
1/2 cup White Sugar
1/4 cup Brown Sugar
1 large Egg
3 mashed Bananas
3/4 cup Butterscotch Chips
Directions :

– Preheat oven to 375 degrees.
– Line muffin tins, and set aside.
– Mix the flour, baking soda, baking powder, salt and cinnamon in a bowl.
– In another *large* bowl, beat together the a margarine and sugars until light and fluffy.
– Add the egg to the sugar mix, then beat until incorporated. Add the mashed bananas.
– Pour the flour mixture into the banana mixture, and mix.
– Stir in the butterscotch chips.
– Fill the muffin tins until they’re 3/4 full.
– Bake for 18 minutes, checking with a toothpick.

    Sounds very yummy! Will have to try this out next time I have some ripe bananas, my hubby likes anything with butterscotch so I am sure he would enjoy these!
